Baked Chicken, Broccoli, and Edamame with Lemon and Garlic



1 bag of edamame

3 chicken breasts

3 lemons

1 head of broccoli

4 cloves of garlic

salt and pepper to taste

2 Tbsp red pepper flakes

olive oil


Set oven to 450 to pre-heat. Put tin foil in a bakers pan. Place chicken breasts and broccoli in the tin foil and add the salt, pepper, garlic, olive oil, juice of 2 lemons, and sliced lemon wedges on top of your broccoli and chicken. When the oven has reached the desired temperature close the tin foil and put in the oven for 40 min or until done. Take out of the oven.

For the edamame, boil a pot of water and when boiling add the edamame until tender and hot. Aprox 3-5 min. Strain and drain edamame.

Plate your chicken and broccoli. Add as much juice as you like to your dish. Then add edamame to the left over juices from the chicken pan and stir. Add 2 tablespoons of red pepper flakes and more salt to taste. I use 2 tbsp for really spicy edamame.

Plate your edamame and serve.
